I tell all my clients to save at least a piece of the wedding cake to take home b/c it is an ACTUAL piece of your special day that will serve as a reminder of everything that happened but without all the whirlwind of events and people around you. Whether your eat your leftover wedding cake the next day, when you return from your honeymoon, or on your first anniversary, you will be able to share the fond memories of your wedding day.
After one year in your freezer, your wedding cake will still taste really yummy, especially if you ordered a chocolate cake. The outer layer of fondant, which you don't have to eat, will protect the cake. One of my clients can testify that part of their wedding cake was saved until the christening of their firstborn child, which happened TWO years after the wedding. The same chocolate cake was served to 30 guests and they still raved about how good it was!
"How do I package my wedding cake before freezing it?"
The best way to preserve the cake is to wrap it tightly with several layers of plastic wrap followed by a couple layers of foil and finally, seal it in a freezer bag. As your first anniversary approaches, let the cake thaw in the refridgerator overnight and then serve it at room temperature.
